Succulent and lean, a chicken breast has to be one of the most versatile proteins you can find. Great simply roasted, or in a curry, stew or stir fry.
OVEN Preheat oven to 180 C . Lightly grease a baking dish. Season chicken as desired. Pop into a baking dish. Bake in the preheated oven until cooked through, about 30 to 45 minutes or until fully cooked.
PAN FRY put the chicken breast on a sheet of cling film or greaseproof paper and cover with another sheet of cling film or greaseproof paper so the breast is sandwiched in-between. Bash with a rolling pin until evenly flat. Remove from the cling film and season both sides with salt and pepper. Heat the oil in a frying pan over a medium heat. When hot, add the chicken breast and cook for 5 minutes or until golden brown. Turn chicken over and cook for a further 5 minutes. Cut open to check chicken is fully cooked or use a meat thermometer.
